Antoine Alciatore created a recipe using
snails, capers, parsley, and Parmesan cheese topped with a cream sauce. Jules Alciatore adapted the dish by using
oysters when French snails became hard to obtain in New Orleans. Because the dish is so rich it was named for the then
richest American, John D. Rockerfeller
