After making a name for himself at Commander's
Palace, Paul Prudhomme along with his wife, K, opened a small restaurant at 416 Chartres Street in the French Quarter.
It was here that blackened redfish was born and Chef Paul brought country Cajun cooking to the city (and to the world).
The restaurant was expanded (at the original location) in 1996 and now seats 200 guests.
